Under the Standard Market umbrella, we currently have two specialty food markets (Standard Market in Westmont and Naperville) and multiple restaurant concepts, both in-market and standalone (including Standard Market Grill, Bakersfield Wood Fired Grill, Standard Tacos & Margaritas, and The CUBE at Standard Market, located across Chicagoland).

We are seeking experienced sushi line cooks to produce sushi at our specialty food market in Naperville. Although based in a grocery-style environment, our restaurant-level sushi program is unique in that we focus on using the freshest fish (not frozen) and top quality ingredients found in our stores.

Our customers love our sushi, and we strive to provide a variety of familiar and innovative maki, nigiri, and bowl options daily.

Responsibilities:
* Produce high quality, consistent maki, nigiri, sashimi, and bowls
* Keep sushi kitchen clean at all times
* Provide friendly and courteous attitude to guests
* Support and ensure consistency of all foods
* Ensure that the department's guidelines, standards and procedures are followed
* Maintain good communication between sushi counter and seafood department
* Be part of a disciplined, well harmonizing team, especially with regards to strict following of closing and opening checklists, cleaning checklists, stock control procurement, deliveries and storage, food cost management, etc.

Requirements:
* Sushi-making experience in top quality restaurant or other high volume environment
* Ability to work nights/weekends/holidays, as required
